Get your chops around this!

Somerset Pork Chops

Mmmm! Tastes of Somerset abound in this declicious pork and cider recipe....

4 x 150g (5oz) pork chops, trimmed of fat

25g (1oz) butter

1 medium onion, thinly sliced

25g (1oz) flour

150ml (1/4 pint) cider

75ml (3 fl oz) water

1 clove garlic, crushed

salt and freshly ground pepper

pinch of dried sage

30ml (2 tbsp) fresh single cream (optional)

 

  1. Fry chops in butter with onion
  2. When chops are brown, remove from the pan
  3. Continue cooking onion until soft
  4. Add flour to pan and cook gently until brown
  5. Stir in cider, water, garlic, seasoning and sage
  6. Place pork chops and onion in a shallow ovenproof dish. Pour sauce over.
  7. Cover and bake at 190C (375F) Gas Mark 5 for 30-40 minutes
  8. Pour cream over chops and serve immediately

 

NB.  This recipe also works well in the slow cooker.
