Somerset Pork Chops
Mmmm! Tastes of Somerset abound in this declicious pork and cider recipe....
4 x 150g (5oz) pork chops, trimmed of fat
25g (1oz) butter
1 medium onion, thinly sliced
25g (1oz) flour
150ml (1/4 pint) cider
75ml (3 fl oz) water
1 clove garlic, crushed
salt and freshly ground pepper
pinch of dried sage
30ml (2 tbsp) fresh single cream (optional)
- Fry chops in butter with onion
- When chops are brown, remove from the pan
- Continue cooking onion until soft
- Add flour to pan and cook gently until brown
- Stir in cider, water, garlic, seasoning and sage
- Place pork chops and onion in a shallow
ovenproof dish. Pour sauce over.
- Cover and bake at 190C (375F) Gas Mark 5 for
30-40 minutes
- Pour cream over chops and serve immediately
NB. This recipe also
works well in the slow cooker.
